Recipe: Pumpkin ‘Squares’

Amanda brings us a yummy fall treat that is not only easy to whip up, but full of family love and tradition.

“One of my favorite things to make during the fall and winter seasons are pumpkin squares. My grandma makes them, my mom makes them — even my soon-to-be mother-in-law makes them! They are quick and easy, and perfect for that pumpkin dessert craving.”


Pumpkin Squares

Ingredients

  • Cake:
  • 4 eggs1 2/3 cup sugar
  • 1 cup oil
  • 15 oz. pumpkin
  • 2 cups flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • Frosting:
  • 3 oz. cream cheese, softened
  • ½ cup butter or margarine, softened
  • 1 tsp. vanilla
  • 2 cups powdered sugar

Instructions

  1. Mix eggs, sugar, oil, and pumpkin until light and fluffy. Add remaining ingredients. Bake in large cookie sheet with edges (jelly roll pan) at 350 degrees for 25-30 minutes. Let cool. Mix all frosting ingredients together, then frost cake.
